Vegetable soup cooked for a few days before, stir fry, or vegetable stew, or self cooked meals from the freezer heated, eaten with sauerkraut, or quince compote (yummy!), cake baked for a few days before in almond milk, with a bit of cream. I don’t know why I have to eat three courses for dinner but I do. Usually less than 20 min and it’s ready - so it is good idea to cook at home, it doesn’t take long at all. Only my dinners are long.

My family always put their hands up for toasted sandwiches when I don't feel like cooking. There is always something in my fridge or cupboard to make sandwiches and all I have to do is bring out the sandwhich press and dinner is served in no time.

I made a fried rice last night in about 10 mins. You can put anything in it that you have...... cubed ham, chopped bacon, egg, shredded chicken, etc along with spring onion, capsicum, diced carrot (fresh as I don't do frozen veges), corn, peas, etc. I used this recipe - https://www.gimmesomeoven.com/fried-rice-recipe/#tasty-recipes-62154 - for the basics.

I understand that it might be difficult if you have a large family but if you have a sandwich press or a larger size toasted sandwich maker then it shouldn't be a problem. I make these myself for dinner sometimes as I don't have money for takeaways or expensive ready to heat frozen meals. Buy cheese slices or grated cheese if you don't want to have to use block cheese and slice or grated it yourself. Thanks for reading!

Once meat is all cooked, add it back to the same wok, then add cooked & drained noodles (keeping flavoured broth/liquid aside) and then add vegetables and egg (if used) and combine well. Add some of the broth back in and mix well. Serves 6-8 people with not many left overs.

Mince meat (beef, pork or chicken) $2 bag of pre shredded coleslaw veges, Asian seasoning (I use soy, oyster sauce, sesame oil, sugar, curry powder, garlic and ginger) and rice noodles. No chopping meat or veges! Stir fry it up (sometimes I add a beaten egg after the meat has browned so it sticks to the noodles better) season it, add the noodles. Cook it thru and it’s done. Very little clean up too.
